Fish frys are a favorite summer activity in Little Rock. This simple recipe will be a hit with your family and friends.

Here's How:
- In a bowl mixed 3 slightly beaten eggs and 2 tablespoons of water. Set this aside.
- Thoroughly rinse 2 pounds of catfish fillets. Roll moist fish in flour (you'll need about 1/2 cup for 2 pounds of fish).
- Dip the flour covered fish in the egg mixture from step one.
- Roll the fish in about 1 and a half cups of bread crumbs (either homemade or store bought bread crumbs will work).
- Fry the fillets in peanut oil for best results. Cook until the fish flakes easily with a fork. Cooking time is about 4 minutes.
Tips:
- Serve with hush puppies, coleslaw, baked beans and iced tea for a traditional southern fish fry.
- This recipe can be used to fry other types of fish but doesn't work well for 'pan' fish (like crappie).
