Make Arkansas Fried Catfish

Fish Frys are a favorite summer activity in Little Rock. This simple recipe will be a hit with your family and friends.
Difficulty: Easy
Time Required: 30 minutes

Here's How:

  1. In a bowl mixed 3 slightly beaten eggs and 2 tablespoons of water. Set this aside.
  2. Thoroughly rinse 2 pounds of catfish filets. Roll moist fish in flour (you'll need about 1/2 cup for 2 pounds of fish).
  3. Dip the flour covered fish in the egg mixture from step one.
  4. Roll the fish in about 1 and a half cups of bread crumbs (either homemade or store bought bread crumbs will work).
  5. Fry the filets in peanut oil for best results. Cook until the fish flakes easily with a fork. Cooking time is about 4 minutes.

Tips:

  1. Serve with hush puppies, coleslaw, baked beans and iced tea for a traditional southern fish fry.
  2. This recipe can be used to fry other types of fish but doesn't work well for 'pan' fish (like crappie).
